Let us start by wishing you all a very happy Pancake Day! We don’t think we are being over the top when we say Pancake Day is by far our favourite Tuesday of the year, I mean who doesn’t love an annual day devoted to using up all the excess food hiding away at the back of the cupboard by cooking up delicious pancakes.
The best thing about Pancake Day is experimenting with exciting toppings. Sure, lemon and sugar, blueberries and crème fraiche or Nutella are great for the first half a dozen pancakes, but who can stop there.
So, here is a delicious and different Pancake Day recipe using our nutty granola.
Thick American-style maple and pecan granola pancakes
Here is our recipe for a delicious thick American-style pancake using Rollagranola to add an extra crunch to your traditional pancakes. The easiest way to get your pancakes perfect is to remember to always add equal parts egg, milk and flour.
Start by breaking two eggs into a measure jug, note how many ml this comes up to on the measuring jug (for example 200ml).
Then pour in the same about of milk and whisk together.
Then add the same amount of flour.
Finally add a generous handful of whichever Rollagranola you have in the house, we recommend our Maple and Pecan Granola.
Melt a little bit of oil in a pan, add mixture and cook until golden brown on each side.
