Ingredients
5 cups gluten-free rolled oats
½ cup roughly chopped nuts (we used walnuts)
½ cup mixed seeds (we used flax, chia, pumpkin & sunflower)
1 ½ tsp cinnamon
3 ripe bananas
¼ cup maple syrup
¼ cup coconut oil (melted)
½ tsp vanilla extract
InstructionsPreheat the oven to 140° (fan oven)
Add all of the dry ingredients to a large mixing bowl, mix and set aside.
In a separate bowl, mash the bananas until smooth. Stir in the coconut oil, syrup and vanilla and mix until combined.
Pour the banana mixture into the dry ingredients and stir until well mixed and all the ingredients are coated.
Separate the mixture onto two-three baking trays, and bake for 30 - 35 minutes or until the granola is starting to brown. Stir and flip the mixture every 10 minutes to ensure even cooking.
Allow the granola to cool completely before transferring to an airtight container. Store in a cool, dry place.
*Why not try adding dried fruit or cacao nibs to your granola once it's cooled?
