So, why not head out and pick some blackberries this weekend?
Ingredients:
3 cups fresh blackberries
3 tbsp maple syrup
1 tbsp water
1 tsp grated lemon zest
2 tsp lemon juice
Instructions:
Add the blackberries, maple syrup, water, lemon zest, and lemon juice to a saucepan over medium heat.
Cook gently, stirring occasionally, until the blackberries begin to break down and the mixture thickens (about 20 minutes).
Serve warm or cold over your favourite yogurt, with fresh fruit, and a generous sprinkling of Rollagranola for that perfect crunch!
Storage tip: Transfer any leftover compote to an airtight container and refrigerate for up to 2 weeks. Serve warm or cold.
