Ingredients
1 cup dates
1 ½ cup ground almonds
2 tsp nut butter
¾ cup Rollagranola (roughly chopped)*
¼ tsp salt
Toppings
¾ cup dark chocolate
Nuts/seeds/fruits/freeze dried fruits/Rollagranola
*We used Awesome Almond but any Rolla flavour will work!
Recipe
Line a tin with parchment paper.
Remove the stones from the dates and soak in hot water for around 10 minutes to soften. Drain before using.
In a blender or food processor combine the ground almonds, nut butter, dates and sea salt. Mix until combined. Add the granola and pulse until the ingredients have turned into a dough like texture.
Transfer the mixture to the tin and press down using a spatula so that the mixture is evenly spread and tightly compact. Pop into the freezer whilst you make the chocolate layer.
Melt the chocolate in the microwave or saucepan and pour over the date mixture and spread to the edges. Sprinkle toppings of choice over the chocolate and pop into the freezer for 15-20 minutes or until the chocolate has hardened.
Take the tin out of the freezer and cut into bars. Store in the fridge and enjoy as and when.
