Here at 'Nutty Towers', we are always looking at ways to conjure crazy and delicious recipes which incorporate our (already) divine creations!

 

So, just for you guys, we've teamed up with Spamellab! A well known blogger and recipe guru, Pamella has joined up with us to create beautiful concoctions and promises to keep it healthy!

Here we have an absolute treat of 'Macadamia & Cacao Granola Bites' - a healthy yet luxurious treat for all occasions. The best bit - after making a batch you will still have enough granola to graze on! Thanks Pamella! 

What you'll need:

For the base –

  • 100g Macadamia Nuts
  • 100g Oat Flour
  • 4 Tbsp Smooth Nut Butter
  • 2 Tbsp Coconut Oil
  • 6 Tbsp Maple Syrup
  • 1 Tsp Ceylon Cinnamon

For the Cacao layer

  • 2 Tbsp coconut oil (I used The Groovy Food Company)
  • 2 Tbsp smooth nut butter
  • 4 Tbsp maple syrup
  • 5 Tbsp Cacao powder

For the topping

Get making!

1. Place the macadamia nuts and oats into a blender or food processor (I use my Ninja Kitchen) and whizz up until ground down like a fine flour.
2. Melt the coconut oil, nut butter and maple syrup then pour in along with the cinnamon and pulse again.
3. Tip into a lined tin or tub (I used a 15cm x 20cm one) and press down with your hands. Set aside.
4. Melt the nut butter, coconut oil and maple syrup then whisk in the cacao powder until smooth. Pour over the base to cover evenly.
5. Scatter over the granola in a generous even layer and pack down lightly. Chill in the fridge for at least 2 hours to set.
6. When ready to serve, pop out the tin/tub and onto a chopping board. Cut into small pieces then enjoy! Keep remaining bites in the fridge for up to 1 week (if they last that long!).
