For those days when you need a showstopper of a dessert in the nick of time - this tart by @bakedbybon is where it's at. Made with the nuttiest Rollagranola Awesome Almond base, a layer of mascarpone and a melody of fruits - it's a hit at any time of the year. Keep the flavours on point by using fruits that are in season.
- 300g Awesome Almond @rollagranola
- 100g melted butter/baking spread
- 200g mascarpone
- 90g double cream
- 90g sifted icing sugar
- In a large bowl, mix together the granola and melted butter/baking spread
- Pour the mix into your tart tin with a removable base
- Press down the mix into the bottom and the sides, then leave to chill in the fridge for 1 hour
- Use an electric whisk to mix together the mascarpone, double cream, and icing sugar
- Spread the filling on top of the tart base
- Decorate with fruit of your choice!
