This Sweet pea soup recipe comes from Jelena (into.trends) and is such a winner!
Ingredients are available year round, it’s easy to make, low in fat and absolutely delicious !🥄 It's made from only 6 plant-based ingredients and is ready in less than 30 minutes!🍵 The ingredients for this recipe are simple but intentional. I've also added some fresh spinach for an extra natural plant-protein.
INGREDIENTS:
- 3 cup Frozen Peas
- ½ Onion, roughly diced
- 1 can Light Coconut Milk
- 1 cup cup Vegetable Broth
- 3 cloves Garlic, sliced
- ⅓ packed cup Fresh Parsley, chopped
- 2 cups of spinach
- Salt and Black Pepper, to taste
To top: Rollagranola Harissa & chickpea Cracking Snacks
COOKING: Sauté Onion and Garlic over medium heat until translucent, about 2-3 minutes and add a splash of broth . Add all of the remaining ingredients, then cover the pot and bring to a boil over high heat. Once boiling, uncover and reduce the heat to low while you let the soup simmer for 8-10 minutes. Transfer the soup to the blender or use a hand blender .
Blend on high until smooth and creamy.
SERVING:
Serve with Rolla cracking ,freshly chopped herbs (parley/dill) , drizzle of olive oil or truffle oil and a fresh bread. Enjoy !
