This particular recipe is a bit of a treat. It comes straight from our founder, Robin, who calls it his "Granola Treat: with a touch of luxury".

Ingredients
Makes roughly 1kg — enough to fill a couple of large jars.
To roast first:
- 90g almonds
- 40g hazelnuts
For the granola:
- 450g gluten-free oats
- 90g cashew nuts
- 70g coconut sugar
- 70g honey (about 3 tbsp)
- 60g sunflower seeds
- 40g pumpkin seeds
- 25g avocado oil (about 2 tbsp)
- 11g desiccated coconut (about 2 tbsp)
- 4g fine salt (about ¾ tsp)
- 50ml water
To finish:
- 50g apple-sweetened cranberries
Method

Roast the nuts. Heat your oven to 150°C (every oven runs a little differently, so keep an eye on yours). Spread the almonds and hazelnuts on a tray and roast for 20 minutes, until fragrant and lightly golden. Roasting them on their own first is what draws out that deep, nutty flavour.

Chop the nuts. Let the roasted nuts cool for a few minutes, then roughly chop them or give them a quick grind if you prefer a finer texture. This spreads the nut flavour right through the mix.

Combine the dry ingredients. In a large bowl, mix the oats, cashews, sunflower seeds, pumpkin seeds, desiccated coconut and your chopped roasted nuts.

Make the syrup. In a small pan over a low heat, gently warm the honey, avocado oil and water. Stir in the coconut sugar and salt and keep stirring until dissolved into a loose syrup.

Mix everything. Machine mix for 1 minute on slow-medium speed to fully distribute the water with the other ingredients

Bake. Spread the granola in an even layer on a lined baking tray and bake at 150°C for 12 minutes. Next, rotate the baking tray and loosen the granola. Then finish at 140°C for 10-15 minutes depending on oven intensity/desired level of bake

Cool completely. This is the step people skip and it's the most important. Leave the granola to cool fully on the tray. It won't feel crunchy while it's still warm; the crunch develops as it cools.

Stir through the cranberries. Once the granola is completely cool, mix in the apple-sweetened cranberries. Adding them after baking keeps them soft and chewy.
Store in an airtight container and it'll keep for up to two weeks, if it lasts that long.
